A synopsis of Yummy 4 the Tummy

The Yummy 4 the Tummy cookbook written for ECE Academy

Yummy 4 the Tummy is Dr. Ellouise Carroll’s child-friendly extension of her Healthy Choices series, designed to make nutritious eating fun, accessible, and exciting for young children and the adults who care for them. While her other books focus on whole-food, plant-based nutrition and the science behind healthy eating, Yummy 4 the Tummy shifts toward playful engagement—helping children build positive associations with wholesome foods through simple recipes, colorful presentation, and hands-on participation.

Dr. Carroll draws from her decades of experience running a preschool, childcare center, and K–6 program in Puyallup, Washington, where she transformed her school’s menu from processed meals to organic, plant-forward dishes. This book reflects the same philosophy but adapts it for younger audiences. Recipes are intentionally uncomplicated, visually appealing, and built around ingredients children can touch, smell, and help prepare. The goal is not just feeding children well, but teaching them to enjoy healthy foods.

The book emphasizes fruits, vegetables, whole grains, and plant-based proteins, offering snacks, small meals, and “mini-projects” that encourage exploration. Dr. Carroll includes tips for parents and educators on introducing new foods, reducing resistance, and making mealtime a positive learning experience. Many recipes double as sensory activities—mixing, shaping, decorating—allowing children to participate in ways that build confidence and curiosity.

Throughout the book, Dr. Carroll reinforces the message that healthy eating begins with early habits. By making nutritious foods fun rather than forced, children develop lifelong preferences that support wellness, energy, and growth. Yummy 4 the Tummy ultimately serves as a joyful, practical guide for families and educators seeking to nurture healthy eaters through creativity, simplicity, and whole-food goodness.

Mentoring, Editing, and Publishing Consultant for Others

Encouraging new and experienced writers as they develop their skills is a joy for Dr. Ellouise.

Short articles, podcasts, or long books—it makes no difference; she loves it all!

She also edits others’ writings. Although comma rules elude her, she purchases Grammarly to help with that one issue. lol

In addition, she loves helping others become published authors on Amazon using KDP (Kindle Direct Publishing). Some go on to publish on their own, and others continue to use Dr. Ellouise’s expertise.

Here is an autobiography (Triple Threat) that she helped Craig Evans write. Craig has become a good friend as this project was developed.
